Millet Khichdi
A healthy and delicious meal!
The moment we hear khichdi, we relate it to something boring and not very tasty. This is not always true. Try this millet khichdi, and you will surely love it.. My kids enjoy this bowl full of nutrition every once in a while… And they are not easy to please when it comes to food.. they have highly developed taste buds and are my biggest critiques. But this does bring a smile to their face and what more can i ask for.
Ingredients:
Serves 2
1 cup millet – soaked for 15 minutes
2tsp ginger garlic Paste
2 green chilli slit in half (remove the seeds if you don’t want it too spicy)
2 green onion chopped (big size) or ½ cup
1 cup chopped vegetables- I have used carrots capsicum and cauliflower.
1 tsp turmeric powder
2 tsp cumin powder
1 tsp coriander powder
½ tsp red chilli powder
Chicken or vegetable broth, 1 cup
Salt to taste
1 tbsp butter/ghee/oil (I love it when it’s made in butter)
Fresh coriander leaves, chopped and cleaned
Water- as per requirement.
FYI: Since you are using broth, be careful while adding salt. Most of the pre-made broths and cubes have added salt. Add accordingly!
A small peek into my kitchen cabinet!
I always use these cubes for making broth. These cubes come in vegetarian and chicken option both. It’s really easy to make. All you have to do it dissolve the cube in hot water and use. For the quantity in his recipe, 1 cube is good. If you like that extra flavour, add 2 cubes.
Cooking Instructions:
- Heat oil in a pan. Add ginger-garlic paste, green chilli and sauté for a minute.
- Add chopped onions, all the vegetables and the spices. Stir well and cook for approx. 2 minutes on low flame.
- Add the millet to the pan and add the stock. The millet might need more water to cook. The liquid should come a little above the millet, so that it looks as if the vegetables and the millet s drowned in water. Add the water accordingly. Add salt and mix well.
- Once the ingredients start to boil, cover it, put on low heat and cook till millet is soft and cooked. Some variety of millets need more water to cook, so add more water if required and mix it. Everything should be thoroughly cooked in the pan and the water absorbed.
- Take it out in a bowl. And garnish with coriander leaves.
Serve hot!

PS: I never like to pressure cook millet. It looks all mashed up to me. But please go ahead if you want to. It’s definitely faster.
