Tomato and Paneer sabzi
This is a very easy and extremely delicious sabzi ( gravy dish). Very few ingredients and takes such little time.. When i want a delicious meal and don’t want to spend too much time in the kitchen, i cook this.. Almost no prep time needed..
Ingredients:
Serves 4
Oil or Butter or Ghee- 1 tbsp
Finely chopped onions- 2 medium size
Cumin seeds – 1tsp
Big Cardamom – 2
Bay leaves – 2
Cinnamom stick – 1 medium size
Hing -1/2 tsp
Turmeric -1 tsp
Curry powder – 1 tbsp
Coriander powder ! tsp
Baby tomatoes- 20 pcs (Use normal tomatoes, if you don’t have these. Just chop them into small pcs. If you don’t have that also, use tomato puree.)
Chopped Garlic- 1 tbsp
Crushed ginger – 1 tbsp
paneer – 500gms
Salt to taste
Coriander leaves for garnishing (optional)
A peek into my Kitchen
I’ll give you a very useful tip. Always keep chopped onion, garlic, ginger and tomatoes in separate zip locks, in your fridge. It will save you a lot of time.
Cooking Process:
Add oil in the pan.
Add cumin seeds.
Once they start to crackle, turn down the flame and add the onions. Stir the onions well.
Add ginger, garlic, bay leaves, cinnamon and cardamom and stir well.
Add the tomatoes and stir.
Once the onions has become light brown, add all the powder masalas and stir in well with 1 cup of water. Cook on very slow flame , till the masala is well cooked (it will leave oil on the side). Add More water if required.
Add the paneer. If the masala is dry, add another half cup water with the paneer. Mix the paneer well in the masala. Water helps the paneer to absorb the flavour and cooking easier.
Add salt.
Cook on low flame, till it’s almost dry.
Garnish with fresh coriander leaves, if they are handy.
I didn’t have any, so have not used them.
Serve hot!
