Red Masala Pomfret Fry
This preparation is inspired by the food I love to eat in the shacks in Goa!
My kids love it and it’s so easy to make.. Its healthy too as fish is good and this preparation doesn’t require too much oil or too much time..
Serves 3- 1 pcs fish for one person.
Ingredients:
3 small Pomfrets, cleaned and slit in the middle. Replace it with basa fillets or any fish or prawn or chicken. You can replace it with any other seafood too.
White onions – 2 chopped finely
Curry leaves – 15 to 20
Garlic and ginger – chopped finely -2tbs
Red Masala- Ingredients and instructions for this is given below
Cinnamon stick-1 inch
Salt to taste
Butter for cooking (replace it with any oil if you like)- 2 tea spoon
Some curry leaves for garnishing
How to make Red Masala?
Red chilli, whole dry – 10 to 15
Garlic -20 to 25
Turmeric powder – 1 tsp
Cumin powder -2 tsp
Cloves-4
Pepper corn -6 to 8
Tamarind paste- 1 tbs
Mustard-1 tsp
Methi seeds- 1/2 tsp
Sugar – 1tsp
Toddy vinegar 5 to 6 teaspoons
salt to taste
Add 5 to 6 teaspoons of vinegar and grind to a fine paste. The result is a bright red chilli paste.
If you don’t want to put n the effort of making the red masala, buy Goan Recheado masala. It’s a ready mix and easy available in most super market or grocery stores, even amazon(India) has it.. You just have to add a little toddy vinegar to it and use it..
Now let’s get started with the fish.
Procedure:
Get three Pomfrets ready. Clean and dry. keep it aside.
Prepare the red Masala and keep it aside.
Once you have all the ingredients ready, we need to prep the fish. Cover the Pomfret with the red masala, generously, on the outside and inside. Remember we had slit the fish!
The inside of the fish needs to be coated well with the masala.
Take a heavy bottom pan, Put it on low heat and add the butter.
Then add the chopped onions, ginger garlic and saute for 2 to 3 minute. Add the cinnamon stick and curry leaves and cook till soft (another 3 minutes). Please keep it on low heat. Cover it while it’s getting cooked.
Once the onion is cooked, place the masala covered fish on top of the onion, and let it cook. Cover the pan.
Turn the fish over for the other side to cook as well.
Garnish with lemon and curry leaves.
Serve hot with steamed rice or buttered buns or Malabar paratha.
Keep thinly sliced onions on the side with this dish if possible.
